An ingenious collaboration between Nestor and Adrian Lasso from El Diviso and Jhoan Vergara from Las Flores developed for Lohas Beans. Both farms have a strong focus on experimental processing and grow different varieties.

This coffee is a combination of Yellow Colombia and Tabi varieties. It goes through a dual fermentation process, an aerobic stage at first, followed by an anaerobic submersion to that brings out stone fruit characteristics. Then the coffee undergoes hot and cold water quenching to preserve its profile. Lastly, the drying happens naturally under a canopy.

Huila is Colombia’s most prolific coffee growing region. With high altitude and volcanic soil, farms sit on rich, nitrogen dense ash from the nearby mountain peaks in the Andes and Colombian Massif. Clouds limit sun exposure resulting in microclimates that allow the cherries to ripen slowly. A slow maturation concentrates sugars and builds dense, complex beans.
